Traditional Murukku Recipe: How to Make Crispy and Crunchy South Indian Snack

A native of Tamil Nadu, murukku is a Tamil word referring to twisting. This crunchy dish is prepared during festive times and special occasions like Sankranti, Gokulashtami, Ganesh Chaturthi, Diwali, marriages and even as a daily tea-time snack.
Made from rice flour, urad dal and Indian spices, this spiral-shaped deep-fried savoury is also known as Chakli in other states of India.
Several murukku recipes are prepared with potato, ragi, butter, jowar, gram flour and many others. But the authentic Murukku is the most famous of all. Read on to know how it is made.
Traditional Murukku Recipe

Ingredients:
The first step of the murukku recipe for making perfect murukku is shopping groceries from your favourite online grocery store.
- 2 cups of rice flour
- ½ cup of roasted urad dal (split)
- ½ tbsp of red chilli powder
- ½ tsp of turmeric powder
- A dash hing (asafoetida)
- 1 tbsp of black sesame seeds
- ¼ tsp of ajwain (carom seeds)
- Salt to taste.
- 1 and ½ tbsp of butter
- Warm water to knead the dough
- Oil
How to Make the Dough?
- Soak 2 cups of raw rice in water for an hour. Drain the water and spread the rice on a clean cotton or mulmul cloth. Once dried, grind it into a fine powder. Please note that you should avoid drying it under the sun. If it’s in large quantities, take it to the mill for grinding.
- Dry roast urad dal (split) in a hot pan for 5 minutes. Then, keep the pan aside until it cools down. Then, grind it into fine powder.
- Sieve both the flours into a mixing bowl. Add red chilli powder, turmeric powder, hing (Asafoetida), ajwain (carom seeds), black sesame seeds and salt to taste in it, and mix them well. As per your spice preference, you can change the quantity of all the spices.
- Pour in soft or melted butter into the dry flour mix and crumble it to ensure it has mixed well, making the flour moist.
- Gradually add hot water to the flour and knead it into a soft dough. Avoid making the dough sticky and watery. If it is sticky, add a little roasted urad dal flour. If it is too thick, add some water to make it soft.
- After kneading it, keep it aside to rest for 5 minutes. Then, knead the dough again.
How to Shape Murukku?
- Wash and dry the murukku press/ Chakli maker and place a star-shaped mould as its base.
- Grease it with oil. Take a small part of the dough, place it inside the press, and push the murukku through the mould into a spiral shape. Press the ends to avoid it from breaking.
What is the Perfect Method to Fry Murukku?
- Heat oil in a frying pot. Then, slide in the murukkus one by one.
- On medium heat, fry the Murukus until both sides turn golden brown.
- Then, place them on a tissue-covered plate.
Storing Murukku
Store them in an air-tight container for 30-40 days and relish the yummy murukkus with hot tea or coffee or share it with guests during festivals.
